
The oil has a bright golden color. The nose is delicately perfumed, with a citrus freshness (crunchy cherry tomato, green tomato, fresh zucchini, fresh eggplant) and a note of fresh herbs (fresh thyme, fresh bay leaf, tomato leaf in the background) at the beginning. There is also a touch of toasted hazelnut, pan-fried purple artichoke and fresh crushed almond. The palate is straight, precise and savoury, with a beautiful intensity from the attack to the finish. We initially smell pronounced toasted and roasted notes (toasted bitter almond, pan-fried eggplant, pan-fried zucchini), an expressive bitterness, even a hint of pepper, combined with notes of pan-fried aromatic herbs (thyme, rosemary). Good persistence in the mouth, with slightly spicy peppery notes and a touch of vegetables preserved in oil with Mediterranean herbs, as well as a distinct toasted hazelnut touch that appears at the very end of the mouth. The texture is silky and pleasant.
