Seta at Mandarin Oriental

Cuisine becomes emotion, memory and vision

In the elegant heart of Milan, where the city’s noise seems to dissolve at the entrance of a hidden oasis, the Mandarin Oriental houses the restaurant Seta, home to the ever-inspired Chef Antonio Guida, who continues to shape his vision of cuisine – one made of storytelling, emotion, and foresight.

Each dish is a chapter in a deeper narrative that weaves together art and memory, tradition and innovation. His creations – like the roasted blue lobster or the veal sweetbread with cinnamon – speak of a gracefully evoked Puglia, while reflecting the sophisticated, cosmopolitan soul of contemporary Milan. It is a constant dialogue between roots and global vision. Two tasting journeys, ”La Via della Seta” and ”Qui e Ora”, guide guests through a tailor-made experience: iconic classics and innovative dishes, flavors that mirror the seasons, and ingredients celebrated for their uniqueness.

Among the standouts for balance and intensity: spaghetti with sea anemones, red prawn tartare, and black lemon, or the scallop wrapped in Swiss chard with salt-baked kohlrabi and citron sauce. These are not just delicious preparations – they surprise, evoke, and speak.

In the dining room, the storytelling continues thanks to the attentive and discreet service of Andrea Loi, Head Sommelier, and Manuel Tempesta, Restaurant Manager. Their presence enriches a vast and carefully curated wine selection, designed to connect with an increasingly discerning international clientele.

The wine list is a true journey through high-quality wines, with over 1,200 labels from Italy, France, Portugal, and other great terroirs around the world. What makes this selection unique is not only its breadth but the philosophy behind it: each label is chosen not just for its excellence, but also for its respect for the environment, the people behind the production, and those who represent it. An ethical and responsible selection, where quality is the foundation, yet is further elevated by the stories behind the bottle – territories, hands, and human narratives…
