(organic) The wine has a pale ruby color. The nose offers a certain concentration and tension. It opens with savory notes of spices (tonka bean, liquorice, cumin, as well as a pronounced peppery touch) and roasted (coffee, toasted almond), combined with a touch of roasted bouquet garni, thyme and dried mint, a hint of dried rose and peony. The fruit is tangy and airy – there are notes of fresh cranberries, red cherry, raspberry, as well as crushed blueberry. The palate is dense, but fresh, with a bitter hint of bird cherry, cranberries and bergamot. It also expresses notes of red cherry and raspberry, combined with a side of spice (licorice, tonka bean, cardamom), roasted (coffee, toasted almond) and herbs (fresh tobacco, bergamot tea). The tannins are fine but solid, powdery and cocoa-like. Good persistence in the mouth, with a salivating acidity.
