(organic) The wine has a pale ruby color. The nose is aromatic, deep, very fruity on the opening and gourmand. It expresses notes of fleshy morello cherry, wild strawberry, crushed raspberry, as well as candied cranberries. The spices on the nose are gourmand and integrated: we find notes of fresh vanilla, licorice, cardamom and tonka bean, as well as a limestone and slightly metallic mineral frame, which brings complexity to the wine. The toasted touch is gourmand and enveloped – there are notes of toasted almond, coffee and dark chocolate. We also find herbaceous notes of dried bergamot tea, dried mint and dried tobacco. The palate offers precision and good definition, as well as a tight structure and a rather closed profile. It expresses the flavors of tart red cherry, tart black plum, crunchy strawberries, fresh cherry and cranberries (with their lively acidity and a hint of bitterness). The finish is long, savory, toasted and spicy, with notes of toasted almond, tonka bean, liquorice, toasted vanilla in the background and dark chocolate, as well as fresh herbaceous and floral notes (peppermint, blackcurrant leaf, violet). Tannins are firm, enveloping and grippy, balanced by a salivating acidity.
