It expresses notes of roasted red cherry, grated nutmeg, roasted coriander seeds, cumin, and liquorice, complemented by herbal touches of dried peppermint and roasted bouquet garni, wrapped in a rich fruity substance (morello cherry, roasted raspberry, wild strawberry, dried blackcurrant in the background). There is also a hint of roasted fruit (toasted hazelnut, cocoa nibs, coffee) and flowers (dried peony, lily). The palate is savory and gourmand, with a fruity and floral attack: it expresses flavors of morello cherry, red cherry, crushed blueberry, wild raspberry, as well as wild rose, lilac, and peony. The mid-palate reveals notes of spice (liquorice, crushed coriander seeds, nutmeg, cardamom) and roasted (toasted hazelnut, a hint of tangy dark chocolate and coffee). Tannins are firm, structured and tight, solid, but not astringent. The finish is savory, roasted (roasted red cherry, roasted coriander seeds, roasted bouquet garni), with a delicate mineral backbone, mouth-watering acidity and a good bitterness.
