La Villa, Château La Sauvageonne 2021 – AOP Languedoc

The nose is elegant, gourmand, complex and offers a spherical side, deepness, a certain intensity, delicacy and a « lacey » side. It reveals notes of nectarine, bright apple and small notes of quenette associated with fine hints of Amalfi lemon, lychee as well as an almost rose hint and thyme. The palate is well-built, supple, airy and gourmand and offers a tangy frame, roundness as well as a spherical, delicate and airy side. A beautiful definition, frank, ample, iodized and a very discreet varietal/local grove hint in the background that drives the tasting. In mouth this wine expresses notes of quenette, bright nectarine, and small notes of lemongrass associated with touches of sweet caviar lemon as well as almost zesty of sweet lime hints, bright small white fruits, wild fennel, saltiness and a very discreet hint of pepper and an imperceptible lavender hint. Beautiful persistence and intensity. Beautiful finesse of grain on the finish/persistence. A subtle hint of butter (even vanilla cream) in the background. A subtle, almost tannic hint on the finish/persistence. Beautiful creaminess and very fine work on the good bitters (in the background). Beautiful persistence.
