(organic) The wine has a ruby color of medium intensity. The nose is textured and offers depth, concentration and delicacy at the same time. It expresses notes of ripe black plum, juicy morello cherry, wild blackberry, wild strawberry, candied red cherry, raspberry coulis, crushed blackcurrant, as well as fresh herbaceous notes (crushed mint, fresh basil, fresh thyme), a fragrant floral bouquet (fresh rose, peony, iris), as well as savoury notes of sweet spices (liquorice, vanilla in the background, crushed coriander seeds, cloves), tobacco, torrefaction (mild coffee, toasted hazelnut) and a resinous touch in the background. The palate offers accuracy, straightness and grippy, firm tannins, envelopped in juicy fruit. It expresses notes of roasted red cherry, macerated red cherry, ripe black plum (even prunes), wild blackberry, crushed blackcurrant (with a touch of crème de cassis), mint chocolate, sweet spices (vanilla, clove, licorice), dried flowers (rose, peony, iris), as well as a hint of fresh tobacco and torrefaction (bitter coffee, cocoa, toasted hazelnut). The finish is persistent and expresses the warming hint of the alcohol, a good bitterness (coffee, cocoa) and a salivating acidity, which helps balance the profile of the wine.
