The nose is aromatic, gourmand and opens with notes of juicy stone fruits (yellow peach, apricot), with a hint of exotic fruits (pineapple, passion fruit). Aeration reveals sweet, honeyed and floral notes (acacia, apple blossom), as well as citrus (candied lemon peel, ripe yellow lemon, grapefruit), autolysis (toasted, even slightly caramelized brioche, a hint of toasted bread and yeast in the background) and bitter orange marmalade, quince and roasted yellow apple. The palate is refined, more reserved than the nose, but sapid. The attack offers a tangy frame of yellow lemon, lime zest, grapefruit, as well as green apple and an autolysis side (toasted bread, yeasts in the background). The mid-palate also expresses notes of fresh quince, linden, chamomile, a touch of fresh hazelnut, brioche and lemon yogurt. The finish is quite persistent, with a salivating acidity, good acidity and expressive citrus flavors, complemented by a touch of yeast and infused chamomile.
