(65% Chardonnay, 35% Pinot Noir, 2017 harvest base + 36% reserve wines, aged in stainless steel vats and oak barrels, partial malolactic fermentation, disgorging in February 2024, dosage 5 gr/l) The champagne has a bright lemon yellow color, medium intensity and rather fine bubbles. Beautiful aromatics on the nose, with concentration, a sweet touch of juicy stone fruits, ripe yellow apple and candied citrus fruits. We can smell in particular the aromas of juicy yellow peach, honey-roasted apricot, roasted pineapple, candied lemon peel, as well as a sweet-bitter hint of grapefruit and lime jam. The brioche and buttery notes, as well as flower honey, lime blossom, toasted hazelnut and fresh almond appear on the second nose. The palate is lively, chiseled, with a fresh, straight and slightly bitter attack. We first find the citrus notes (fresh grapefruit and grapefruit jam, then completed by touches of lime and yellow lemon), associated in the mid-palate with notes of yellow peach, apricot, brioche, bitter almond, toasted hazelnut and honey. The finish is persistent, salivating, with a pleasant bitterness and a hint of very delicate yellow and green apple. Beautiful freshness and complexity, a silky and persistent mousse.
