Yuntaku

An amaro inspired by the island of Okinawa. In Japanese, “Yuntaku” is used to refer to what we call “chatter” or small talk. The Paolucci Distillery, represented by Benedetta Santinelli and Simone Rachetta (with support during the lockdown from mixology expert Eleonora De Santis and herbalist Riccardo Tuttolomondo), found a way to enhance the communal after-dinner drink experience. They created an after-dinner liqueur that is not only versatile but also perfect when served simply on ice. It brings a significant bitterness to the center of the palate while also offering depth and harmony through its herbal and spicy notes. This digestif aims to honor the distinctly Italian tradition of amaro consumption while also incorporating cultural elements unique to Japan. After two years of research and development, the flavor of Yuntaku is anchored by the infusion of goya, also known as bitter melon, combined with Sichuan pepper, ginger, jasmine tea, sour cherry, hibiscus, and green cardamom.
