Domaine de Mas Caron Si j’ai envie 2021 – Vaucluse

The wine has a ruby color of medium intensity. The nose is reserved and tense, but more open after aeration. It expresses notes of ripe black plum, morello cherry, wild strawberry, raspberry jam, associated with a pronounced minty aroma (which appears after aeration), as well as notes of liquorice, roasted bouquet garni , fresh rosemary, dried thyme, violet, dried peony and dark chocolate. We also find a touch of wild mint, toasted almond, black pepper and coffee. The mouth is structured, straight, with power and concentration. It expresses the flavors of ripe morello cherry, black plum, dried red cherry, roasted red cherry, raspberry coulis and fresh wood, combined with a gourmet hint of torrefaction (coffee, dark chocolate, toasted almond), notes aromatic herbs (roasted bouquet garni, fresh rosemary, dried thyme), as well as a fine spicy (liquorice, black pepper) and floral (dried violet) perfum. The finish offers the freshness of ripe and tangy fruits (morello cherry, black plum), savory notes of tobacco and spices (nutmeg, a touch of pepper), as well as good bitterness and refreshing acidity. Beautiful persistence with notes of roasted aromatic herbs.
