Raoul Gautherin & Fils Chablis Grand Cru « Vaudésirs» 2022 – Chablis Grand Cru

The wine has a lemon yellow color of medium intensity, with golden highlights. The first nose is honeyed, floral and herbaceous: it expresses notes of sweet tobacco, infusion (herbal tea, chamomile, linden), tea leaf, as well as thyme flower, acacia, apple blossom and fresh rosemary in the background. After aeration, we find the fresh aromas of green apple, yellow lemon, lemon zest, green plum and tangy apricot, a mineral touch (limestone), slightly spicy (a hint of liquorice and coriander), of aging (toasted hazelnuts in the background, yeast, toasted bread, vanilla yogurt, apricot yogurt). The palate is silky, elegant, slightly bitter on the attack (bitterness of lime and chestnut honey), but pleasant. Then, it expresses notes of honey, wax, ripe apricot, candied lemon, lemon zest, grapefruit in the background, green plum and green apple pulp, combined with fine woody and spicy notes (slightly toasted hazelnut, a touch of liquorice, nutmeg and coriander seeds). In the mid-palate, the wine also expresses flavors of fresh wood and toasted wood, lime blossom and chamomile infusion, as well as apple blossom and vanilla yogurt. Pleasant smooth and oily texture, lots of gourmandise, density and concentration, balanced by a good level of acidity and a very delicate bitterness.
