This umeshu has a beautiful light apricot color with shine and a very slight haze. The nose is intense and fresh on apricot and plum. With aeration, there is a saline side that emerges, still with plum but also candied lemon. The palate is fresh, tangy and sweet with floral and vegetal notes. We have touches of citrus zest such as candied lemon and orange but also plum. We perceive a hint of pleasant fresh vegetal. The acidity is very present, it lightens the whole thing nicely. The finish is salivating with notes of plum and apricot. There’s a nice umami to it.
