It has a beautiful light and shiny straw yellow color. The first nose is fruity with notes of Granny Smith apple and fine hints of yeast. We also perceive touches of almond as well as fresh hazelnut. With time, there is a seductive roundness with stone fruits such as fine notes of peach as well as apricot. We can also perceive light touches of citron. The palate is fresh with well-executed effervescence. There is a nice minerality and a tangy aspect. The attack is frank, the mid-palate has a slight astringency which gives fullness to the Champagne. We have notes of cider apple, pear but also juicy pineapple and luscious white peach. The finish is in a beautiful tension with dried fruits like almond.
