The wine has a deep ruby color. The nose is fleshy, spicy and slightly chocolatey. It expresses in particular the notes of fresh and macerated morello cherry, juicy wild strawberry, red currants, raspberry coulis and black plum (which is slightly reminiscent of prunes), associated with a touch of mint chocolate, licorice, white pepper, cloves, as well as a herbaceous touch of blackcurrant leaf and vanilla in the background. On the palate, the wine offers freshness, airiness and tanginess. It expresses the flavors of tangy bigarreau cherry, crunchy blackcurrant, wild strawberry, morello cherry and fresh black plum, combined with spicy notes (white pepper, cloves, a touch of liquorice), a savoury touch of roasted meat, as well as aromatic herbs (roasted thyme and bay leaf) and smoke. The tannins are fine, but firm and a bit grippy. The finish is quite persistent and offers a juicy fruitiness, combined with good acidity.
