The wine has a pale lemon-yellow color. The nose is fragrant and offers a pronounced spicy and peppery aromas. It expresses notes of white pepper, more slightly, of ground cumin and Sichuan pepper, associated with fruity, fresh and tangy notes (green apple, lime, zest of lime, lemon juice), as well as delicate floral notes (apple blossom, acacia), hints of fresh herbs (lemon thyme, peppermint) and a fine minerality in the background (reminiscent of limestone rock). On the palate, the wine offers richness, smoothness and an enveloping attack, with slightly sweet flavors. It notably expresses notes of juicy yellow peach, ripe apricot, Meyer lemon, candied lemon peel, orange zest, a touch of yellow melon, crushed green apple, as well as notes of white flowers. (acacia, apple blossom), peppermint, a hint of spice (white pepper, cumin). The finish is fresh and persistent, with salivating acidity, a touch of bitterness and chiselled notes of ripe citrus. Beautiful concentration, depth and balance.
