Seiras – Azeite Virgem Extra Médio (Portugal)

(Native varieties: Verdeal Transmontana, Cobrançosa, Madural and Santulhana. Harvest 2024).
The oil has an intense, bright golden color, with slight greenish reflections. The nose is fragrant, enveloping, round, even a bit oily / unctuous. The first aromas are rather vegetal, but ripe and not green (ripe green olive, roasted green zucchini, very ripe green zebra tomato, grilled eggplant). Then, we find notes of marinated artichoke, fleshy beefsteak tomato and fresh almond, associated with a very delicate touch of pineapple tomato, tomato leaf in the background and candied green olive. The palate is round and silky, with an enveloping and pleasant fat as well as a peppery, even spicy touch at the beginning. Then, we find the notes of roasted vegetables (roasted zucchini, roasted eggplant, roasted tomato), which develop towards the slightly bitter flavors of ripe green olive, fresh green almond, as well as touches of ripe tomatoes (beefsteak tomato, green zebra) and a discreet hint almost aromatic herbs / basil. Good persistence in the mouth, quite long, but delicate, on notes of dried fruits (fresh almond, toasted hazelnut). A discreet floral hint in the background.
