(organic) Nice concentrated yellow lemony color, with very light green reflections. This olive oil is aromatic, enveloping on the nose, with a pleasant vegetal structure (ripe tomatoes: ripe pineapple/yellow tomato, cherry tomato, fresh olive, cut green zucchini, a hint of artichoke), as well as a touch of fresh almond, fresh verbana and a vegetal hint of vine tomato stem. There is also a slight herbaceous hint of tomato leaf and fresh thyme. The palate is velvety, with a soft attack and a more expressive bitterness in the middle of the mouth. Power in delicacy. We find the flavors of fleshy ripe tomatoes (beefsteak tomato, vine tomato, yellow tomato), fresh zucchini, complemented by notes of grilled vegetables (eggplant, zucchini), candied tomato, as well as a hint of tapenade, sage and fresh almond. Good length in the mouth, with a bitterness that softens on the persistence and an enveloping and round texture. Elegant complexity.
