The oil has a bright lemon yellow color, quite deep and slightly golden. The aromas are lively, even slightly acidic, with notes of fresh tomatoes dominating (green tomato “green zebra”, pineapple tomato, red grape tomato), complemented by a very subtle touch of lemon zest. There are also notes of fresh green zucchini, cucumber, green tomato leaf, ripe green olive and fresh artichoke. On the palate, there are also delicate tangy flavours of fresh tomatoes (“green zebra”, pineapple tomato, and beefsteak tomato), notes of fresh zucchini, fried zucchini and eggplant, as well as a very slight note of toasted hazelnut, fresh almond and fried artichoke. The bitterness is delicate and appears on the persistence. The texture is silky and pleasant.
