The olive oil has an intense golden color. The aromas are concentrated, expressive and fresh. Firstly, we find fresh green olives, fresh zucchini, fresh tomatoes (slightly sweet cherry tomatoes, tangy green zebra and pineapple tomato), as well as fresh and marinated artichoke, fresh almond and fresh Mediterranean herbs – basil in the background, rosemary, thyme. The palate expresses a good bitterness and a touch of pepper on the attack, combined with distinct toasted notes (toasted hazelnut, toasted almond), wrapped in the mid-palate in flavors of roasted and pan-fried vegetables (roasted eggplant, pan-fried zucchini with Mediterranean herbs), as well as roasted bouquet garni, fleshy red tomato, ripe green olive, dried bay leaf, basil and fresh thyme. The texture is dense, rich and round, pleasant and enveloping. Very good persistence on the toasted and roasted flavours. Complexity, harmony and a silkiness.
