Moulin CastelaS, CastelineS Noir d’Olive Vierge, olives maturées– Vallée des Baux de Provence AOP (France)

The oil has an intense golden color. The nose is precise and aromatic, with a dominant and expressive note of black olive (reminiscent of Kalamata olive and candied olives). We then find a tangy hint of fresh tomatoes (green zebra, pineapple and crushed beesteak tomato), roasted tomatoes with Provençal herbs, as well as fresh zucchini, even cucumber in the background, combined with notes of fresh aromatic herbs (rosemary, thyme, a hint of sage), as well as fresh and pan-fried eggplant. The taste is deep, concentrated, but rather delicate. The attack expresses the flavors of black olives, Kalamata olives, candied olives with aromatic herbs, as well as roasted zucchini, pan-fried eggplant, roasted beefsteak tomato and toasted almond. Good persistence on the palate, with notes of fresh vegetables (fresh zucchini, fresh eggplant), fleshy red tomatoes, and toasted hazelnut on the persistence, which adds a very slight bitterness and a toasted-grilled side. The texture is enveloping, dense, without being heavy. A very aromatic oil, with a beautiful complexity.
