Makaros Edos – Extra Virgin Olive Oil (Greece, Lesbos)

(AB. Variety: Kolovi, harvest 2023): The color is quite light, lemon, with intense golden highlights. The nose is fresh, frank, precise and is made on notes of fresh tomatoes (“green zebra” first, associated with cherry tomato), fresh eggplant, green olive, fresh artichoke, associated with a nice iodized character. The palate is silky, enveloping, with a soft attack as well as verticality. The mid-palate is quite powerful, with a bitterness of tapenade. A discreet creamy character. The flavors are ripe, reminiscent of marinated vegetables (marinated eggplant), roasted vegetables (roasted tomatoes), grilled artichoke, dry scrubland/dry grove, fennel, olive leaf… The finish offers flavors of dried fruits (sweet almond, toasted hazelnut) and dried herbs (dried bay leaf, dried thyme). The palate is very persistent, with a good gourmet bitterness of toasted bitter almond and a hint of tapenade in the background. A great racy and well-balanced olive oil.
