The nose is elegant, delicate and precise. It reveals notes of preserved yellow tomato, ripe Pineapple tomato and, more lightly, Torino tomato, combined with touches of basil, sage, preserved vegetables and delicate hints of fresh herbs. With aeration, aromas of freshly cut grass, artichoke, wild mint, chicory, green almond and a subtle hint of Penjab pepper emerge, together with delicate floral notes and a discreet touch of fresh almond. The palate is beautifully crafted, delicate and harmonious, offering lovely richness, well-balanced roundness and an attractive interplay between substance, freshness and tension. It displays a beautifully integrated bitterness together with a fine herbal character and a pleasant peppery sensation on the finish. Flavours of firm yellow tomato, sage, fresh herbs, crisp artichoke and chicory combine with notes of finger lime zest, fresh almond, green almond, chives and a very subtle hint reminiscent of Espelette pepper and Penjab pepper in the background. A delicate touch of Torino tomato completes the palate. Long, precise and gastronomic, the finish combines lovely richness, beautiful tension and an elegant bitterness that brings freshness, complexity and character.
