 The oil has a golden color. The nose offers refreshing and pleasant vegetal notes of fresh zucchini and fresh eggplant with a hint of roasted eggplant, rich aromas of plump and juicy beefsteak and pineapple tomatoes, kumato tomatoes, as well as fresh almond, green olive, and a touch of olive leaf. The palate is enveloping, smooth, and flavorful, with a slightly bitter attack and notes of hazelnut and toasted almond, followed mid-palate by flavors of pan-fried zucchini, crushed beefsteak tomato, roasted red tomato, pineapple tomato, and pan-fried eggplant. Good length on the palate, where a pleasant bitterness and a toasty character return.
