The oil has a golden color with very slight green highlights. It is very aromatic and expressive on the nose: there are fresh notes of vegetables (fresh eggplant, zucchini), tomatoes (plump beefsteak tomato, juicy yellow tomato), artichoke, as well as a hint of dried fruit (fresh hazelnut, fresh almond in the background), bay leaf, and a delicate floral touch in the background. The palate is flavorful and fragrant, with a peppery attack and a fairly pronounced and present, but well-integrated and pleasant, bitterness that develops into notes of toasted hazelnut and toasted almond on the finish. One also detects flavors of roasted aromatic herbs, fried zucchini, fresh beefsteak tomatoes, and roasted red tomatoes. The texture is dense and rich, but not heavy. A very gourmand, fragrant and flavorful oil.
