Dehesa el Molinillo, Coratina (Espagne)

récolte 2024-2025 (Coratina variety) The oil has a golden color with very slight greenish reflections. The nose expresses aromas of ripe vegetables and pan-fried vegetables (crunchy red tomato, fresh eggplant, sautéed zucchini, crushed beefsteaktomato, fresh zucchini). There are also notes of fresh almond, toasted almond, bay leaf, olive leaf and ripe green olive. The palate has a round and delicate, even airy texture. It firstly expresses a good bitterness of bitter almond and dried grapefruit, which then transforms into gourmet toasted notes (toasted almond, toasted hazelnut), persistent on the finish. We also find flavors of roasted and pan-fried vegetables (roasted courgette, roasted aubergine in the background, pan-fried purple artichoke), tomatoes (crushed beefsteak tomato, fleshy yellow tomato, red tomato), combined with notes of roasted aromatic herbs (roasted bouquet garni), which complement the bitter and toasted notes on the gourmet, powerful and persistent, slightly spicy finish.
