The nose is distinctive, subtle, yet precise. It initially expresses notes of fresh olives and candied olives, olive leaf, as well as fleshy beefsteak tomatoes, crunchy cherry tomatoes, artichoke and fresh zucchini. There is also a herbaceous freshness (tomato leaf, fresh rosemary, fresh thyme), notes of fresh nuts (almond, green walnut) and a very delicate touch of toasted almond. The palate has a candied (candied olives, zucchini and eggplant candied with herbs) and roasted (roasted aromatic herbs, roasted tomato) attack, with an intense peppery and bitter side (good bitterness of toasted bitter almond), which transform into toasted and roasted touches during the tasting. The finish is persistent, more on delicacy and herbaceous notes (dried bay leaf, olive leaf). An intensely fragrant and tasty oil.
