The oil has a bright lemon yellow color, with golden highlights. It expresses the pronounced aroma of thyme, but without smothering the typical aromas of olive oil. There are also notes of tangy fresh tomatoes (green zebra tomato, yellow pineapple tomato, cherry tomato), fresh rosemary, basil, as well as fresh zucchini and fresh crushed almond, with a delicate hint of roasted tomato. The palate is flavorful, with an expressive herbaceous attack (dried thyme, dried rosemary, basil), complemented by notes of fresh tomatoes (red tomato, pineapple tomato), roasted zucchini and fresh almond. The finish is persistent, with a dominant note of thyme, delicate and sweet (without perceptible bitterness).
