There is also a delicate tomato acidity in the aromas (pineapple tomato, beefsteak tomato), enveloped into notes of roasted red tomato, sautéed zucchini, fresh almond, fresh artichoke, as well as ripe green olive, rosemary, and roasted Mediterranean herbs, along with fresh vegetables in the background (fresh zucchini). The palate offers a savory, even powerful, attack with an expressive peppery note, as well as a noticeable, but pleasant bitterness (reminiscent of grilled eggplant and toasted almond). There are also notes of roasted red tomato, fried zucchini, fresh tomatoes (pineapple tomato, beefsteak tomato), fresh hazelnut, as well as roasted Mediterranean herbs, ripe green olive and fresh bay leaf.
