This Champagne has a beautiful intense golden color with shine. The nose is pronounced with notes of yeast, brioche coming out of the oven as well as fine hints of cooked yellow apple. We also perceive touches of saffron as well as a very light toast. When aerated, it is more intense and delicate at the same time. The fruits are present with cooked pear and red plum. The palate is fresh, refined with intensity. We perceive citrus fruits like lemon and juicy grapefruit, crunchy apple and bread dough. In the mid-palate, almond appears with a discreet note of liquorice. The finish presents notes of yellow curry as well as saffron and poached cooked pear. We also have exotic fruits like baked papaya as well as dried mango and candied pineapple. It is a beautiful Champagne with balance. There is a fine minerality which is like a backbone of the tasting. We start with fresh fruit and quickly fall in love with more tertiary notes but always with dynamism. The effervescence contributing to this perception. The finish is long, delicate, subtly toasted with a hint of crushed blackberry.
