Sauvion, Dilection, Vieilles Vignes 2020 – Chinon

The wine has a ruby color of medium intensity with very light garnet reflections. The nose is precise, delicate and fragrant. It first expresses a fine minerality (chalk, limestone, wet stone), which are then complemented by notes of sweet spices (cinnamon, licorice, a touch of star anise and vanilla), flowers (wildflowers, violet, lily), aromatic herbs (dried mint, rosemary) and minty chocolate in the background. On the palate, the wine is silky, round and enveloping. The attack is sweet and fruity, it offers notes of roasted red cherry, morello cherry, wild plum, wild strawberry, which are then completed by notes of cinnamon, dark chocolate with mint, licorice, white pepper, bay leaf, juniper berries (in the background), dried rose, wild flowers and violet. The tannins have a fine texture, but young and a little rough. The acidity is salivating and lively, it gives the wine freshness and softens the tannins. Good length on the fruit.
