The foam is light with fine bubbles. The champagne has a straw yellow color that tends towards gold. The nose is intense on mountain honey, flower pollen, yellow cider apple and acacia flower. It is light and delicate. Little by little, other apple textures arrive: compote, juice, stewed apple with a hint of vanilla. The nose is simple and very well worked. The palate is fresh and limpid with salinity on the attack. The tasting is gaining momentum, always on the apple. Minerality accompanies salivation. The finish is tasty with umami, apple but also small pear and white cherry. It’s clean and direct. attractive.
