GASTON COLLARD Blanc de Noirs

There is a nice compact foam that shows a beautiful light pink gold yellow color. The nose is powerful and intense on the fruit but also on woody notes. We have touches of undergrowth. The aromatic is evolved with spices, vanilla and pepper. It’s fresh and minty. Little by little, we perceive some notes of biscuit, apple and cooked banana. The mouth is fresh and direct, ample, it is fruity with fresh banana but also mashed banana, passion fruit and a delicate aroma of vanilla pod. There is a nice balance. The tasting is pleasant with an interesting bubble which allows a delicate chew. The finish is fine on the grain of vanilla and the discreet toast. There is fresh minerality but it is also very sunny with, at the end of the tasting, notes of peach and plum. We end on a persistent umami. The whole is beautiful and complex.
