Champagne Jean Velut, Témoignage, 2011

The color of this Champagne is clear and shiny with a beautiful golden color and dynamic strings of bubbles. The nose is aromatic, pretty with beautiful, well-defined fruits such as juicy plum, apple in all its forms as well as fine hints of fresh pear. We also have touches of raspberries and citrus zest. When aerated, it has more tertiary aromas with a gourmet brioche, almonds as well as hints of lightly roasted hazelnut. A yeasty side is also present and we find it in the mouth with a fresh and frank attack. The effervescence is very pleasant, it supports the tasting with its freshness. We find notes of apple, pear as well as salted plum. There is a nice minerality with a chalky side in the mid-palate. The finish is tasty, with quince and dried fig. We always have the fine yeasty hints that accompany the tasting until the end. The finish is long, fine. It is a beautiful, well-balanced, chiselled Champagne.
