Champage Froment-Griffon, Vindémia, 2008

This Champagne has a beautiful straw yellow color with golden reflections, shiny with very numerous and dynamic bubbles. The first nose is round, pleasant, intense with a magnificent note of sugar brioche and bread. Then little by little, touches of fruit appear with cooked yellow apple, poached pear and light soy sauce. There is a tasty, umami aspect that emerges. With air, the scents are delicate and enveloping. We perceive a hint of sweet spices and almond. The palate is fresh with present acidity. We have notes of kirsh cherries, juicy williams pear with alcohol, apple but also spices like cardamom and star anise. There is a nice minerality with a slightly astringent attack. The mid-palate is supported by salivating freshness and the finish presents an aromatic saffron and candied quince. It is a Champagne with character, well crafted.
