Château Chauvin 2012 – Saint-Emilion Grand Cru Classé

Château Chauvin 2012 – Saint-Emilion Grand Cru Classé

The nose offers refined power, concentration and a nice complexity. The first nose expresses spicy and savory notes, precise and elegant:  the aromas of dark chocolate, sweet coffee, cocoa powder, mint in chocolate, liquorice, cinnamon stick, ground cloves, as well as a very slight note of smoked meat in the background. The second nose expresses aromas of fresh red and black fruits (morello cherry, black plum, blackberry, blueberry, crushed strawberry) and roasted fruits (roasted red cherry, red plum jam, raspberry coulis), combined with the freshness of herbs and flowers (cut wild mint, rosemary branch, a hint of fresh curry, violet, cornflower, a slight touch of lily). On the palate, the wine offers suppleness, juiciness and open and varied flavors. It expresses notes of fresh ripe red and black fruits (black plum, blackberry, blueberry, morello cherry, wild strawberry), roasted red cherry, crushed strawberry and raspberry coulis, combined with tasty notes of sweet spices (liquorice, ground clove, grated nutmeg), as well as a slight note of smoked meat and toasted almond. The tannins are melted, fine, but firm. Nice mouthwatering and refreshing acidity and good persistence in the mouth which offers complexity and expresses the primary notes of red cherry and wild strawberry, spicy secondary notes as well as very fine tertiary flavors of fallen leaves in the background. A great development in the bottle.
