Château Olivier 2021 – Pessac-Léognan

The wine has a pale lemon yellow color. The nose is fragrant and complex: it offers gourmandise and roundness of stone fruits, balanced by freshness and a chiseled notes of citrus and herbs, as well as a fine woody and spicy hints. We find in particular the aromas of fresh lemon zest, candied lemon peel, grapefruit, lemon juice, white peach, apricot, pineapple and passion fruit. On the second nose, we also sense a herbaceous touch (freshly cut grass) and green apple, associated with notes of sweet spices (a hint of vanilla, ground cloves, nutmeg), acacia and apple blossom, as well as a hint of toasted hazelnut. The palate is very fragrant and expressive, with a nice balance between an oily texture and acidity. The attack is gourmand and juicy: with notes of stone fruits and exotic fruits (yellow peach, apricot, pineapple, passion fruit). Then, the wine develops towards tangy notes of candied lemon peel, yellow lemon zest and lime jam, associated with a good bitterness of grapefruit and a fine floral bouquet (acacia, apple blossom). The finish is persistent, ample and sapid: it adds notes of sweet spices (the sweetness of vanilla, nutmeg, cloves) and a toasted note to the wine, with a touch of caramelised hazelnut. A salivating acidity and a pleasant bitterness add elegance and an airiness. A great wine, which combines richness and finesse.
