The first nose expresses a delicate limestone minerality, which is then complemented by toasted, honeyed and yeasty touches – toasted hazelnut, fresh hazelnut, flower honey, warm brioche and toasted yeast. There is also a lactic hint of raw butter and lemon yogurt. A beautiful fresh fruitiness that envelops everything – fresh orange, orange zest, candied lemon, a hint of grapefruit, fresh quince, white peach and grapefruit, combined with a fine floral fragrance (honeysuckle, acacia, lime blossom). The palate is gourmet and savoury, with a sapid and expressive attack – on a beautiful juiciness of sweet stone fruits (ripe peach, apricot) and citrus fruits (orange, orange zest, kumquat). The mid-palate offers lactic notes of raw butter and lemon yogurt. The finish is toasted and yeasty and expresses the flavors of toasted bread, toasted hazelnut, as well as toasted yeast in the background. Beautiful persistence in the mouth, chiseled and fresh, with a bitter hint of grapefruit, a persistent hint of toasted bread and a salivating acidity. Complexity, depth, all in elegance and freshness.
