The champagne has a pale lemon yellow color. The nose is reserved at first, but after aeration expresses a subtle and refined floral bouquet. We find aromas of lime blossom, acacia, chamomile (in the background), which are then complemented by gourmet touches of candied lemon, grapefruit zest, juicy white peach, as well as fresh pineapple, a hint of limestone minerality and notes of lees aging (fresh butter, a lactic touch of yogurt). The palate offers notes of ripe citrus fruits (yellow lemon, orange zest), a good bitterness of grapefruit, gourmet flavors of ripe peach, apricot, white flowers (acacia, honeysuckle, lime blossom), as well as butter, a hint of fresh hazelnut and the sweetness of pineapple. The finish is persistent, gourmet, with a beautiful acidity and a pleasant bitterness, associated with a certain roundness. Good balance and a fruity gourmandise on the persistence.
