Very nice mousse, deep and lively. The bubbles are numerous and delicate. This Champagne is pale lemon color. The first nose is fresh, the aromas are intense with apple and pear notes. We can also smell biscuit and autolysis flavors of butter. With air, the nose is minty with dried fruits like almond and fresh hazelnut. The tasting has a delicate attack with acidity. We can feel yellow apple, bread crumb, almond and butter. The middle of the mouth has got tension with a lemony acidity. Refreshing. The finish is subtle with wonderful aromas of flowers like Ylang Ylang and almond tree flower. It’s very long, minty with a fine quince jam after at least 30 caudalies. Marvelous and complex.
