The wine has a ruby color of medium intensity. Beautiful aromatic with complexity and depth, on the freshness and menthol notes on the first nose, complemented by woody and spicy aromas. We first smell peppermint, menthol, a delicate hint of pine needles, even sap, which then combine with notes of liquorice (even star anise), Timut pepper, ground clove, as well as dark chocolate, toasted hazelnut, toasted vanilla (in the background), as well as fresh herbs (thyme, cut rosemary). On the palate, the attack is savoury and gourmet, with lots of fruit (morello cherry, crushed blackcurrant, blackberry, sour red cherry, a hint of redcurrant and crushed raspberry). In the mid-palate, we find notes of cocoa (which brings a delicate bitterness and a powdery texture in the mouth), sweet spices (liquorice, Timut pepper, clove), as well as roasted notes (toasted hazelnut, a hint of coffee) and a refreshing menthol side (pine sap, peppermint). The finish is persistent, savory and chocolatey, with bitter touches of coffee and almond that come back in retrospect and bring complexity to the wine. The tannins are melted, silky and structured, beautiful acidity, integrated and refreshing. Elegance, balance, associated with a certain power in finesse.
