The nose is reserved at first, but opens up after aeration. It first expresses tasty and distinct spicy aromas (licorice, crushed vanilla, nutmeg, pink pepper), as well as a pleasant herbaceous side (rosemary, dried bay leaf, thyme, fresh tobacco, crushed peppermint in the background). We then find the fruity notes of wild blackberry, dried blackcurrant, crushed raspberry, morellocherry, red cherry, red currant, associated with hints of roasting (toasted hazelnut, even a touch of pecan, coffee, dark chocolate, cocoa) and a pleasant sweet note of blackcurrant jam. The palate offers a certain concentration and juiciness in its fruity material, but seems closed. It expresses notes of crushed fresh blackcurrant, wild blackberry, crushed raspberry, morello cherry, sour red cherry and redcurrant, combined with notes of aromatic herbs (peppermint, thyme, rosemary, a touch of peppermint), roasting (coffee, toasted hazelnut, a gourmet touch of dark chocolate with mint), as well as a subtle floral hint of lily that appears on the finish. The tannins are melted, but enveloping and perceptible, slightly cocoa-flavored. The finish is savory and combines tangy fruity flavors and notes of roasted aromatic herbs. Beautiful acidity, an airy side and delicacy.
