The wine has a medium-intensity ruby color. The nose is fragrant, spicy and woody at the opening: it expresses notes of toasted hazelnut, toasted wood, cocoa, vanilla and dark chocolate with mint. Then, we find a juicy and concentrated fruity material, with a light touch of chocolate (chocolate morello cherry) – fresh morello cherry, wild blackberry, red cherry jam, ripe strawberry, crushed black plum and crushed raspberry. There are fragrant and refreshing notes of peppermint, dried rosemary, roasted bouquet garni, as well as peony and violet. The palate offers tension, a tangy side and a solid and gripping tannic structure. It expresses the flavors of red cherry, blackcurrant, morello cherry, crushed blueberry, wild blackberry and bird cherry, accompanied by notes of roasting (coffee, toasted almond), dark chocolate, as well as dried and roasted aromatic herbs (roasted bouquet garni, dried mint). The finish is savory, with elegant floral notes (peony, violet, wild rose) and juicy fruity flavors (morello cherry, red cherry), complemented by a pleasant bitterness of dark chocolate.
