The color of the oil is dense, more golden than lemon yellow. The aromas are fresh, with a dominant herbaceous and vegetal character. There are distinct notes of fresh tomatoes (yellow tomato, vine tomato, “green zebra” tomato), tomato leaf, olive leaf, fresh green olive, freshly cut zucchini, cucumber and eggplant, as well as fresh almond and almond shell. The flavors are mild, reminiscent of roasted and pan-fried vegetables rather than fresh vegetables, with a hint of nuts. There are flavors of pan-fried zucchini, roasted eggplant, pan-fried red tomatoes, meaty beefsteak tomato and pineapple tomato, as well as toasted hazelnut, fresh almond and tapenade. The oil is silky, balanced and very smooth on the palate, without bitterness, but with a touch of toasted hazelnut on the persistence.
