The oil has a deep, bright golden color. The nose is dense and concentrated, with complexity and a beautiful vegetal and fresh vegetable freshness. We find notes of fresh zucchini, fresh eggplant, fresh crushed tomatoes (beefsteak tomato, pineapple tomato, a tangy touch of green zebra tomato). We also smell a bouquet of fresh herbs (thyme, rosemary, basil, a hint of sage and maquis), a sweet, almost floral touch, as well as fresh almond and ripe olive in the background. On the palate, the oil is savory, with a gourmet attack on toasted notes (toasted hazelnut), roasted bouquet garni, marinated artichoke and pan-fried vegetables (fried zucchini with herbs of Provence), pan-fried eggplant, roasted beefsteak tomato, as well as bay leaf and basil. The texture is supple, enveloping and rich, but not heavy. Very persistent on the palate, with notes of pan-fried vegetables and roasted hazelnut.
