Moulin CastelaS, CastelineS Classic Vierge Extra – Vallée des Baux de Provence AOP (France)

The oil has a bright golden color, of medium intensity. The nose is fragrant, with expressive aromas of ripe tomatoes (beefsteak tomato, pineapple, vine tomato with its vegetal touch), fresh zucchini, fresh artichoke, crushed green olive. It also expresses refreshing herbaceous touches of fresh bay leaf, basil, rosemary and fresh thyme, as well as fresh almond. The palate is enveloping, silky, without being heavy. Good bitterness on the attack, reminiscent of bitter almond with gourmet toasted and roasted touches of toasted zucchini, roasted tomato, as well as fresh tomatoes (beefsteak tomato, vine tomato, juicy pineapple tomato), Mediterranean herbs (roasted bouquet garni, fresh thyme) marinated artichoke. Very good persistence on the notes of toasted almond and roasted vegetables, as well as a hint of pepper on the finish.
