(Base: 2023 Famille Perse, AB. Extra Olive Oil. Varieties: Salonenque, Aglandau, Verdale des Bouches du Rhône, Grossanne): Golden color, of medium intensity, becomes less intense towards the edge. The nose is vegetal, even slightly acidic (especially on the note of green tomato at the beginning), which is then completed by a touch of tomato leaf, cut green zucchini, wild fennel and fresh eggplant. Then, the oil expresses aromas of aromatic herbs (rosemary, cut thyme), fresh bean and fresh sweet almond. The palate is pleasantly round, elegant, mellow, stretched, with an enveloping fat, not heavy, a hint of structural bitterness (very light which appears at the beginning and fades in the middle of the mouth). Finesse in its power. The flavors are reminiscent of roasted vegetables (roasted eggplant, roasted zucchini, roasted tomato), bay leaf that combines with notes of aromatic herbs (rosemary, fresh thyme) and fresh sweet almond (even toasted). The finish is delicate, moderately persistent.
