The nose is herbaceous, savoury and gourmand. It expresses notes of roasted and dried herbs (thyme, roasted rosemary, dried bay leaf, dried mint and dried basil), ripe tangy fruits with a slight macerated nuance (fresh morello cherry, macerated red cherry, dried red cherry, blackcurrant, blueberry in the background, roasted strawberry, roasted raspberry), which are then complemented by a touch of balsamic, nutmeg, cardamom, liquorice, dried flowers (rose, cornflower), a hint of fresh almond, toasted hazelnut and coffee, as well as a hint of tar. The palate is straight, slender, chiseled, with a good bitterness and a lively salivating acidity. It expresses more the fresh tangy fruits (red cherry, blackcurrant, blueberry, plus hint of raspberry and morello cherry) than macerated fruits, a toasted hint, as well as the bitterness of coffee, cocoa, bitter almond and an integrated roasted herbaceous touch (bouquet garni). Good persistence on the freshness, a nice acidity and a good bitterness
