This wine is made exclusively from Chardonnay vines located on the La Santissima hill in Gussago at an altitude of around 270 metres above sea level. After manual harvesting, pressing proceeds very slowly and softly. Controlled fermentation takes place with selected indigenous yeasts in temperature-controlled stainless steel tanks. Racking takes place at a temperature of around 10°C to avoid malolactic fermentation. After the addition of the draught syrup, the wine is bottled with crown corks for approximately 72 months.
It is golden yellow with a dense and persistent perlage. On the nose, the immediate attack is floral and honeyed, then a note of exotic but not cloying pastry with fruity tones of quince that make the nose rich and opulent. The sip enters baroque, but then acidity and bubbles parade it towards fresh and citrus notes.
